Mango Water Kefir
Sweet, tropical, and tangy; this delightful drink is like a soft fizzy mango soda that’s perfect for a hot summer day.
Ingredients
3 - 4 pieces of dried mango (Kirkland Organic Dried Mangoes)
1 cup of water kefir

*Reduce ferment time by half a day if you live in a warmer climate.

1 mason jar (12 oz. or larger)

Instructions
Place dried mango into the mason jar.
Measure one cup of water kefir liquid and pour into the mason jar.
Close the lid but not too tightly. Do not use swing top bottles because mango slices will reconstitute and get stuck in the bottle.
Store in room temperature for two days.
Strain mango water kefir into a cup. If you’re feeling adventurous, you can eat the mango slices as well. Drink as soon as it’s ready. If you don’t plan to drink immediately, store in the refrigerator for no more than two days.
Notes
Is the dried mango edible after ferment?
The reconstituted mango slices are still edible and I love to eat them but some people will find them a little soft. Try it and see if you like it. If you ferment longer than three days, they may be too sour to eat.
Mango water kefir ferment time
If you are unafraid of vinegar, you can try ferment for 3 days which will start tasting a bit like a cross between mango beer and vinegar. It’s actually super delicious and less sweet. I’d recommend it for those with adventurous taste buds.
Kirkland Organic Dried Mangoes
Why this brand of dried mangoes? Well, my mom bought it from Costco and after my first piece, I abandoned it to the pantry of forgotten “healthy” foods. My husband describes the flavour as sour mango scented leather and he’s quite right. It’s a struggle to chew. One day, out of curiosity, I tried putting a few pieces into my water kefir and soon it became one of our favourite flavours. Get a bag of these and you’ll be set for making mango water kefir for a few months.
Why dried mangoes?
Actually I tried fresh mangoes and frozen mangoes as well. I haven’t tried the really sweet dried mangoes from other brands though. Welp, the fresh mangoes and frozen mangoes lacked in sugar and after two days of fermentation, they tasted really sour. When I reduced it to one day, the flavour was too subtle. I haven’t figured out the ratios yet but once mangoes are in season again, I’ll give it a try. Until then, I’m loving the convenience of dried mangoes.
